Sausage & Goat Cheese Stuffed Zucchini

  • 4 eight ball zucchini

  • 1 small onion diced

  • 1# hot italian sausage

  • 6 oz Goat cheese crumbles

  • 1 cup diced tomato

  • 1 Tablespoon chopped fresh basil

Saute onions, add sausage and saute till browned. Remove from heat and add remaining ingredients. Stuff zucchini with mixture and bake until zuc is softened (350 for 30-40 minutes) or Grill (covered 30 - 40 minutes). (modified from "One United Harvest" by Julie Sochacki)
