Sauteed Zucchini with Herbs

  • 3 Tbsp butter or olive oil

  • 1 clove garlic

  • 1/2 sweet onion

  • 1.5 teaspoons chopped fresh marjoram or oregano

  • 1lb zucchini sliced thin

  • salt (optional)

Heat the butter or oil in a large heavy skillet. Add the onion and brown lightly over high heat. Mix the herb(s) of your choice with the zucchini.  Add to the skillet and stir-fry for 1 minute. Cover with a spatter lid. Reduce heat and simmer for 5 minutes. Sprinkle with salt just before serving. (modified from Lois Burpee's Gardener's Companion and Cookbook)

NOTE: This is how Peter and I normally cook our zucchini dishes - mix and match all 3 of our zucchini varieties to make a colorful sidedish.
