Sauteed Zucchini with Herbs
Heat the butter or oil in a large heavy skillet. Add the onion
and brown lightly over high heat. Mix the herb(s) of your
choice with the zucchini. Add to the skillet and stir-fry
for 1 minute. Cover with a spatter lid. Reduce heat and simmer
for 5 minutes. Sprinkle with salt just before serving.
