Baked Rhubarb

Wash and dry 1lb rhubarb and cut into even lengths. Spread 2 Tablespoons of red currant, raspberry, or strawberry jam over the bottom and sides of a small casserole. Add rhubarb and put 1 Tablespoon of selected jam on top. Cover and bake in moderate (350°F) oven for 30 minutes.  Remove from oven and add sugar (1/2 to 1 cup) and cinnamon to taste.
